Menu Plan Monday - We need fish recipes!

Monday- Salmon Croquettes (ala Paula Dean), Slow simmering Green Beans (Gooseberry Recipe)  & Baked potatoes
Tuesday- Beans, Rice & Cornbread
Wednesday- Potato Soup in Bread bowls, salad
Thursday - **SugarPie's Birthday*** Pizza with salad and strawberry pie!
Friday - Bean & Cheese Burritos, Mexican corn & rice
Saturday- Meatball Sandwiches, home fries & carrots
Sunday - Super easy Duggar Mexican Frito Pies


Slow Simmered Green Beans
from Gooseberry Patch's Slow Cooker Meals
  • 1 1/2 pounds of green beans
  • 1 stalk of celery diced
  • 1/4 cup onion chopped
  • 1/4 cup margarine sliced
  • 4 beef bouillon cubes
  • 1 tablespoon sugar
  • 1 teaspoon garlic salt (I use 2 teaspoons of minced garlic)
  • 1/4 t dill seed (I didn't use it because we didn't have it)

Place ingredients in a slow cooker ; stir to mix. Cover and cook on low setting for 3-4 hours it serves 6 to 8. But these green beans are so good I'm going to start cooking two times as much!  To find out what other meal planning maniacs are up to check out Orgjukies Menu plan Monday.

MenuPlan Monday


Monday - Tomato Basil Soup with Grilled Cheese Sandwiches
 Tuesday-  Chicken Enchiladas, Mexican Corn & Re fried Bean
Wednesday- Beans Rice & Corn bead
Thursday-Chicken & Spinach Alfredo with Veggies & Garlic Bread
Friday- Homemade Pizza & Family swim night!
Saturday- Dinner out at Burger Joint by the Bible Bee
Sunday - Left Overs


Simple Frugal Mexican Style Corn
Frozen Corn
1/2 can mild Rotel (diced tomatoes, peppers)
1 teaspoon of minced garlic (optl)
salt & pepper to taste
Mix and cook!
We make about 10 servings of corn with the 1/2 can of rotel.

Cooking Through Gooseberry Patch...revised

Here are the super tall Sour Cream Cornbread muffins from Gooseberry Patch that we made. When you make the batter for these it will appear to be a little bit dry but in the end they are very moist. These were very good but not as sweet as I like my cornbread to be so I will be adding a little more sugar. But these were light and tasty muffins we heartily reccomend.

By the way I went back to Sam's Club to buy more Gooseberry Patch Cookbooks and my selection was seriously limited. You should all be ashamed of yourselves for swooping in and buying all of those cookbooks. Sam's originally had about 50-75 books and about 5 different titles. When I got back less then a week later there were only 5 books left!  I did not realize you would all get out there and buy them all up! I had wanted to get another This and That book to do my first give away, maybe one day! In the meantime go to http://www1.gooseberrypatch.com/  and order yourself a couple of really good cookbooks. We have to keep these women in business because they are are keeping my people's tummys very happy!

Fried Green Tomato


So my tomato plant lasted until December and it finally died and it was choke full of tomatoes! So like a true frugal princess Parker and I picked off every tomato and put them up to be used. So the first thing we made was a country delight...Fried Green Tomatoes...what a wonderful way to use a green tomato. I got this recipe from a farmer a at the Bryan College Station Farmer's Market.
Fried Green Tomatoes:
1 cup cornmeal
1 teaspoon house seasoning or season salt
a bunch of grease/oil
1 egg
beat egg and dip tomatoes in it
put cornmeal in a reused ziploc, then drop the tomatoes in and coat the tomatoes with cornmeal then into the oil over medium heat until light brown.
Warning: green tomatoes eaten raw do not taste very good but one they are cooked yummy!
