This Week's Meal Plan
Here at Roosterhill we like to eat well on a budget so this time I will put the prices of items so you see that it is possible to eat well on a budget! We are feed 3 adult portions and 3 children portions with two more littles trying to get big enough to join us at the table.
Monday- La Madeline tomato basil soup & Italian grilled cheese Sandwich
Tuesday - Beef Tips ($1.98) with mashed potatoes (.98)& corn (1.50) ..total $4.46
Wednesday - Beans (.50), Rice (.75)& Corn Bread (.25)... total $1.50
Thursday -Easy Chili Mac (from Gooseberry) with green beans
(Sorry I do not have a price for the macaroni)
Friday - Bean & Cheese Burritos with Fruit ...total $4.34
Saturday - Spaghetti (1.18 Whole Wheat) Meatballs (1.75), Organic Salad (Salad mix from Sam's Club)(.95) & French Bread (.89) total $3.59
Sunday - We have fellowship meal and I take Split Pea Soup ($1.25) and a double order of Mac n Cheese (.74) for the kiddos.
Rooster Hill Bean & Cheese Burritos
- 1 (16oz) can refried beans
- 1 cup rice (cooked)
- 1 cup salsa
- 1 teaspoon taco seasoning
- 2 cups shredded cheddar cheese (divided)
- 12 (6 inch) flour tortillas
- tomatoes (diced, to serve)
- sour cream (to serve)
Spoon about 1/3 of a cup of the mixture into the center of a tortilla. Fold up both of the sides and grab the bottom end and roll up. Repeat until are burritos have been wrapped.
Arrange burritos in a greased baking dish, and top each burrito with cheddar cheese. Cover and place into the oven. Bake at 375 degrees for 25 minutes. Serve with tomatoes, sour cream and lettuce if desired.

and yes, it costs much more to eat healthy but I tell myself I'm saving in the long run =) I just make the healthiest affordable choice too. good advice as usual!!
