Sweet Potatoes on sale = sweet potato pie


Sweet Potatoes are .20/# and to me that means it's time to make and freeze some Sweet Potato pies &, Mashed Sweet Potatoes. Sweet Potatoes are low on the diabetic glycemic index and I will make a low fat edition of this pie & a homemade crust for us to enjoy all year long!


Mississippi Sweet Potato Pie
A sweet potato pie recipe, made with butter and sweet potatoes, along with vanilla and cinnamon.
Ingredients:
4 ounces light butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar (1/2 cup granulated sugar, 1 1/2 cups of yellow fake sugar)
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) fat free evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared low fat homemade pie shells, unbaked
Preparation:Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.Makes 2 pies.

Great minds think alike! I stocked up on sweet potatoes to enjoy most of the winter. Last year I kept a little more than a bushel in a crate in my pantry and they lasted fairly well until spring. The few that sprouted were given to my daughter to plant for more sweet potatoes. This year, I think I'll freeze at least half of what I have.
